I'm going to be self promoting for a second, and I'm sure that's shunned, but I have created an app called SignMyPad. It's a PDF signature app. Allows you to not only read apps (which if you want to just read go with iBooks), but you can take PDFs that you need to fill out and sign and do it right on the iPad. Unlike iAnotate, which does annotations, we allow you to sign right on the document. You can add other elements, such a a text line, the date, a check mark and a radio button.
